The Baking Management Program builds on the Professional Baking Program to further
develop your background in baking, plus give you hands-on, practical training in production
management. The theory classes are designed to give you a theoretical background of
supervision and production management.
The Management Lab program consists of nine training stations. You must choose to
train at six of the stations and will spend approximately five weeks in each. Management
students will work with mentors which will be the instructor techs, the instructor,
or the store / storeroom supervisor. As you learn to manage the stations, the daily
decision making in the stations will gradually be turned over to you.
